Join us this January for an exclusive dining experience as chefs Paul Iskov of Fervor and Matt Sartori reunite, teaming with Alewife and LS Merchants to create a truly unforgettable event.

Paul and Matt first met at the acclaimed Restaurant Amuse, forging a friendship that has shaped their culinary journeys. Matt and his partner, Fi, were instrumental in the early days of Fervor, helping to establish its mission of showcasing native Australian ingredients through immersive dining experiences.

For this special occasion, we’re collaborating with two like-minded businesses, well-known for their craftsmanship and dedication to sustainable, high-quality ingredients. Paul and Matt will design a multi-course menu that celebrates the richness of local and native ingredients, brought to life through their collaboration with:

Alewife: Recognized for her exceptional Jun and Kombucha, Alewife will create a native-inspired Jun for this collaboration, featuring bold botanicals to perfectly complement one of the courses.

LS Merchants: Known for their expressive, terroir-driven wines, LS Merchants will expertly pair their creations with each dish to elevate the dining experience.

This event is a celebration of creativity, collaboration, and the extraordinary flavors of Western Australia.
