Great Southern Distilling Company
Great Southern Distilling Company was founded in 2004 and is the very first distillery to legally make Single Malt Whisky in Western Australia.

Today the company’s flagship brand, Limeburners, is an internationally acclaimed Australian whisky. In 2017 and again in 2020, Limeburners was honoured by the American Distilling Institute as the World’s Best International Craft Whisky. A bottle of Limeburners is also on display at the Western Australian Museum in Perth, as an example of a WA brand that is recognised as one of the best in the world.

The Limeburners distillery is located on the very edge of Princess Royal Harbour in Albany, which offers pristine views every day as well as a beautiful see breeze, allowing the barrels to breath in the fresh, mildly salty air.

The whisky is handcrafted using local grains and water sourced from limestone aquifers below the distillery, while the peated expressions utilise peat hand collected from a peat bog near the Valley of the Giants in Walpole. All these elements contribute to making Limeburners whisky absolutely unique and unlike any other in the world.

Great Southern Distilling Company’s cellar door is open for tastings of Limeburners Whisky as well as sister brand spirits, Giniversity Gin, Tiger Snake and Dugite Whiskey. Local beers and wines are available too, as well as coffee and tea.

Book a distillery tour and watch how the distillers at Great Southern Distilling Company craft their award-winning whisky. Observe how traditional copper pot stills and small-batch techniques are used to create Limeburners Whisky and discover the art of whisky distilling as an experienced guide takes you through the process step by step. After the tour enjoy a flight of three core range whiskies, American Oak 43%, Sherry Cask 43% and Port Cask 43%.

There are also casual lunches on offer, cocktails and gin blending classes available so that you can try your hand at making your very own bespoke gin.
